Moist Carrot Cupcakes

Assalammualaikum...
kalau sebut pasal desserts mesti terbayang yang manis-manis kan??? I'm not a sweet tooth person... especially sweet desserts... sometimes I will skip desserts... I prefer starter or appetizer rather than desserts... tapi semenjak dua menjak ni mood baking kerap kali datang... makan nye tak seberapa... but I love the smell of freshly baked cake... heaven!!!

I would love to share this simple recipe from my dearest aunty, Hajjah Rohaya Jaafar... for me she is one great baker... my mentor in baking... as usual this is my 1st attempt and it taste so good... I'm on cloud nine... hahahaha... masuk bakul angkat sendiri... tak pe lah kan... sendiri bake, sendiri makan, sendiri judge... couldn't ask for more...

 

bahan-bahan:
250gm butter
2 cawan caster sugar
2 1/4 cawan self raising flour
2 btg carrot medium size diparut
1 cawan walnut roughly chop
5 biji telur
1 sudu kecil ground cinnamon
1 sudu kecil vanilla essence



cara-cara:
panaskan oven pada suhu 180'C.
pukul butter dan gula hingga kembang.
masukkan telur sebiji demi sebiji, pukul hingga sebati.
masukkan vanilla essence.
satukan tepung dan ground cinnamon.
masukkan campuran tepung, gaul rata.
masukkan carrot diikuti walnut.
sudukan adunan ke dalam bekas cupcakes dan bakar selama 15-20minit atau hingga masak.


 
 
bahan-bahan untuk cream cheese:
2 cawan icing sugar
250gm Philadelphia cheese
combined and mixed together until smooth



***(boleh dibakar menggunakan loyang 10 atau 12inci menggunakan suhu 180'C selama 45minit atau hingga masak)
